Asparagus/brocoli fettucine (Low Fat) Recipe

This is a modified Weight Watchers Recipe that is one of my favorites.

 Here is what you will need:

This recipe serves 3

1 Clove of Garlic, chopped
1 bunch  asparagus or  1 lb of brocoli
3 cups of whole wheat or Barilla plus noodles
1/4 chopped sweet onion
3 ounces of Parmesan cheese
3 eggs
1 cup non fat cottage cheese
Seasoning salt
1 cup fresh mushrooms, sliced

In a blender add your cottage cheese, eggs and parmesan cheese.  Add about a teaspoon and a half of your seasoning salt and blend till creamy.  Set aside for later.

In a medium size fry pan sprayed with Pam, sauté the broccoli or asparagus, garlic, onions and add fresh mushrooms if desired.  Bring the veggies to a slightly tender.  🙂 

Cook your noodles to serve the sauce over.

Sauce preparation:
Take your blended sauce and pour into the pan you made your veggies in.  Make sure and put your veggies on the noodles already.  AND VERY IMPORTANT, make sure the burner is on low when you start your sauce.  This sauce can be ruined fairly easy if it is too hot.  You are looking for a creamy texture, not a curdled one.  🙂  so that means you heat the sauce all the way through stirring constantly.  You don’t want to make scrambled eggs out of it, but you are simulating a cream sauce.   So bring it up till it is hot, then pour over the noodles and veggies and serve warm.

If you want to make this for more folks the sauce recipe ratio is 1/3 cup cottage cheese, one egg, one ounce of parmesan per person.
